Bubble tea is one of the varieties of iced tea with milk. It is nothing but the cold tea with milk having bubbles/Bobas. It is also called as pearl milk tea or boba milk tea. It is a Taiwan based tea(Source-wikipedia). Bobas are the main ingredient of this tea and hence the name bubble tea. Bobas are nothing but the chewy tapioca balls. With these bubbles we can make variety of teas like bubble green tea, and various fruit juices and shakes with bobas.
The main ingredient to make the boba is the tapioca flour. The only difficult part in making the boba is the making small balls with the dough. Once you made the boba then making bubble tea or bubble shakes will be very easy.
Generally the boba available in market will be black in colour. But here this homemade boba will be light brown color only; if you want you can add little color in the flour itself while kneading.

Personally I feel the homemade boba is tastier than the one I tasted in restaurants, because we are cooking it in sugar syrup, so there will be mild sweetness in the boba which gives nice taste.

BOBA/PEARLS/TAPIOCA BALLS

 HOW TO MAKE BOBA/ TAPIOCA PEARLS IN HOME FOR BUBBLE TEA

YIELDS: ½ CUP

INGREDIENTS:
                         ¾ cup tapioca flour
                        ¼ cup hot water(approx.)
                        ½ cup brown sugar
                        1 ½ cup water                                          -
PREPARATION:
Take the flour in a mixing bowl and add the water little by little.
First mix it well with a spoon or fork, because water will be so hot.
Then knead the flour with hands. If the dough is sticky , then coat the hands with the flour.
Once the dough is ready (non sticky and pliable like our chapatti dough) divide it into two or three parts.
Roll it into very thin log and then make small equal sized balls out of it.
METHOD: 
In a pan add the brown sugar and water and stir till the sugar is mixed well.
Once it starts to roll boil, add the prepared balls and aloe it to cook.
It will take around 12 to 15 minutes to cook completely.
You can see the colour of the balls will be changed and it will look like transparent.
At first it may be sticky but later on it will become normal.
Remove from heat and let it cool down.
Use the cooled boba whenever required ie., while making bubble te or other bubble shakes or juices.

NOTES:
  • In shops the bubbles will look black colour, but in homemade, the bobas will be light brown only.
  • You can use white sugar also instead of brown sugar. But to give light brown colour I have used brown sugar as per the original recipe.
  • Bobas will stay good for 2 days in sugar syrup itself, but softer if you use immediately. But it starts to become little harder and more chewy after few hours.
If you get ready made boba in shops then simply cook it in boiling water / sugar syrup and use whenever required.
