Russian salad/Olivier salad is a yummy salad recipe having lot of vegetables. The name itself says the origin of this salad is Russia.  It is really a boon for the people who don’t like raw vegetables. Yes. In this recipe all the vegetables we used are boiled in water or steam cooked only. Additionally the mayonnaise and cream will give extraordinary taste to this salad.
Generally chicken or boiled eggs will be added in the actual Russian salad recipe. But for vegetarians, we can make it without those items and can enjoy this salad.

I have first tasted this salad in a restaurant in jubail and really loved it a lot. Whenever we are visiting that restaurant, we will order the vegetarian version (without chicken or eggs) of that salad.

RUSSIAN SALAD(OLIVIER SALAD)

VEGETARIAN RUSSIAN SALAD(OLIVIER SALAD)- HOW TO MAKE RUSSIAN SALAD/OLIVIER SALAD(VEG VERSION)

INGREDIENTS:
                                    ¼ cup chopped potato
                                    ¼ cup chopped beans
                                    ¼ cup chopped cabbage
                                    ¼ cup chopped carrot
                                    ¼ cup chopped apple
                                    ¼ cup sweet corn
                                    ¼ cup green peas
                                    ½ cup cream
                                    ½ cup mayonnaise
                                     1 teaspoon pepper powder
                                    ½ to 1 tablespoon sugar(adjust as per your taste)
                                    Salt to taste
                                                                         
PREPARATION:
Chop all the vegetables into bite sized pieces
Then boil /steam cook the vegetables except potatoes separately or together along with little salt.
Boil potatoes separately as it may become if cook along with other vegetables.

METHOD:
In a mixing bowl take the boiled or steam cooked vegetables one by one.
Then add the mayonnaise, cream, pepper powder, sugar and very little salt and mix well.
Serve chill.

NOTES:
  • You can add the pineapple chunks also.
  • Non vegetarians can add boiled and chopped eggs also as per the original recipe.
  • While mixing add very little salt only, because it already the vegetables have salt which we added while cooking.
  • Stem cook the vegetables will retain the colour more than boiling in water.
  • I didn’t add mustard powder, if you want you can add little mustard powder also for enhanced taste.
