CARROT HALA RECIPE/ GAJAR KA HALWA  USING PALM CANDY

Carrot halw is a scrumptious sweet prepared using carrots and milk. Generally we use Sugar for the sweetness, but in this recipe I have used palm candy, yes., actually nowadays I am trying to avoid white sugar , so replaced white sugar with palm candy. You can use the white sugar also if you like.

Making of this halwa will be little time consuming, but not like wheat halwa J. It takes time to reduce the milk, so minimize the time you can use evaporated milk or condensed milk too. I will post the recipe using condensed milk in near future.

Apart from cooking time, grating the carrot is little time consuming work. You can simply chop and grind the carrot as coarse while preparing bulk. But am not sure about the texture.

Generally halwa requires more ghee, but here we have used very little ghee only for flavour.

CARROT HALWA

CARROT HALA RECIPE/ GAJAR KA HALWA  USING PALM CANDY

INGREDIENTS:
                                    3 cup grated carrots
                                    1 cup minus 2 tablespoon powdered palm candy
                                    3 cups full fat milk
                                    2 tablespoon ghee
                                    1 teaspoon cardamom powder
                                    Few cashew nuts
                                    Few melon seeds
            I used
* 5 medium sized carrots to get 3 full cups of grated carrots.
            *3/4 cup of palm candy to get the required palm candy powder.
                                               
PREPARATION:
Wash and peel the skin of the carrots. Then grate them finely using the grater and keep aside.
Powder the cardamoms and keep it ready.
Powder the palm candy , then measure and keep aside.

METHOD:
In pan add a tablespoon of ghee and roast the chopped cashews till it becomes golden brown.
Keep the roasted cashews aside.
In the same pan (in the remaining ghee) and the grated carrots and saute.
Saute the carrots for around 3 to 5 minutes in medium flame, till the raw smell goes off and the colour of the carrots becomes pale.
Then add the milk and allow it boil.
Boil the milk with carrots for around 30 minutes in medium flame.
Stir in between to avoid burning at the bottom.
Remove the milk solids around the vessel and put them in the boiling halwa in between. Otherwise they will starts to burn.
At one stage the halwa becomes thick and the milk will be almost reduced.
Then add the powdered palm candy and stir.
Now halwa becomes thin again.
Stir continuously.
Add the cashews and cardamom powder and remaining ghee. Stir well.
Once the halwa reaches the thick consistency, add the melon seeds and remove from flame.
Serve hot or warm!!!

NOTES:
  • The flame should be medium or low medium only throughout the process.
  • Stir the halwa in between to avoid burning at the bottom.
  • You can grind the carrots into coarse and add, but taste texture may differ.
  • After roasting the cashews, if the ghee is not there, add a tablespoon of ghee and then saute the carrots.
  • You can replace the palm candy with ¾ cup of white sugar.
  • If your palm candy is having impurities, melt them in little water and filter the syrup and then add that to the boiling halwa.
  • Adding melon seeds is optional.

Once the halwa reaches the thick consistency, add the melon seeds and remove from flame.
